Al pastor is marinated overnight in achiote and citrus, then carved fresh off a traditional trompo — not every truck does this, and most guests can taste why it matters. Carnitas are braised low and slow in their own fat with orange and bay leaf until golden and falling apart. Handmade corn tortillas, three fresh salsas made daily, and birria served consommé-style with dipping broth round out a menu as close to Mexico City street food as South Jersey gets.
