Glassboro's favorite fast-casual Mexican food truck maintains a standard most trucks in the category don't: ingredients are chopped and prepared to order at the window, not pulled from containers that have been sitting since morning. Carne asada, smoky al pastor, grilled chicken, slow-braised barbacoa, and a robust black bean option for vegetarian guests are the proteins. Fresh pico de gallo, roasted salsa roja, house guacamole, pickled jalapeños, and crema complete the builds into burritos, bowls, and tacos. Mesa Fresh has a strong following at Glassboro community events and Rowan University-adjacent gatherings, and works the Gloucester County market and festival circuit from spring through fall.
